Coconut Oil in Brownies?

In case you haven’t noticed or haven’t been paying much attention to recent food trends, coconut oil is a very popular butter/oil replacer in baking.We thought that we would test whether or not coconut oil could replace the vegetable oil in our favorite brownie recipe. As you can see in the pictures, it did a fine job of making dense, fudgy brownies!


The brownie recipe that we love to use has both vegetable oil and butter in it. When we made the brownies for this experiment, we replaced only the vegetable oil. If you want to try replacing both the vegetable oil and butter, let us know how it turns out! The reason we decided to only replace the oil is because the oil is all fat, but butter is made of fat, milk solids, and some water. Replacing the butter with oil would change the over all fat content of the brownies. The excess fat added by the oil could change brownies in ways that we may not necessarily like. In true science fashion, we only wanted one variable in our little baking experiment so that we would know exactly what caused any changes in our brownies.


We replaced the oil with melted coconut oil in a one to one ratio. The brownies maintained their fudgy texture and crackly top! If you use unrefined coconut oil, there will a small coconut taste which doesn’t have to be a bad thing. You could put some coconut frosting on the top and make them chocolate coconut brownies or you could put chocolate frosting on the top to amp up the chocolate flavor. If you really don’t want the coconut flavor or don’t like it, you can used refined coconut oil. Refined coconut oil doesn’t have a coconut smell or taste like the unrefined kind. Although, if you were looking for a healthier alternative, most people will tell you that the process of refining the coconut oil will destroy some of the health benefits. Overall, we would call this baking experiment a success!! We believe that coconut oil can be a great replacement for oil in your brownies!!

      They are gooey and fudgy and soooo delicious! We like to fool ourselves that since they have coconut oil, they’re healthy so we can eat more 😉 (but they’re also just as delicious with oil!)

      If you use unrefined coconut oil, the brownies will definitely have coconut flavor. If you don’t fancy that then you can use unrefined coconut oil and it won’t alter the flavor!
