Cake Batter Cookies

Hey ya’ll! Hope you had an awesome weekend and that your having a great Monday!

As you know, this past weekend was the opening ceremonies and the first weekend of the olympics. Naturally, we spent the whole weekend glued to the tv watching everything we possibly could of the olympics. We love the olympics and we have watched them for as long as we can remember. The fact that everyone bands together and supports their country is pretty cool. No matter what is happening in America or how much Americans complain about the USA, give us a team to root behind and suddenly America is the greatest country to ever exist and we are all decked out in red white and blue. No questions ask, we’ll root for our teams.IMG_3337 copy

So, for this week, we decided that we needed to make a dessert and post to celebrate not only the olympics, but also the USA. After all, we are some of those crazy Americans you’ll find whole heartedly rooting our team on.

These cake batter cookies are perfect for any olympics viewing party you may be hosting or going to. They are simple to make and the add ins are easily customizable. We used red, white, and blue sprinkles, however you can use any color or mix of colors of jimmy sprinkles that you want. We also have white chocolate chips in this recipe, but you can use a mixture of white and chocolate or just chocolate. However you change them up though, you just can’t go wrong because these are one of the best cookies that we’ve had (and trust us, we’ve had lots and lots of cookies!)

When mixing these cookies, it is important that you don’t over mix them once you have the sprinkles in the batter. If you mix them too much, you will crush your sprinkles, and nobody wants crushed sprinkles! Also, it’s important that you use jimmy sprinkles and not nonpareil sprinkles (the little ball sprinkles), as the colors will bleed into your batter and it won’t be pretty.

1 cup butter (2 sticks), softened

1 cup brown sugar, packed

1 cup granulated sugar

2 eggs

2 tsp. vanilla

1 1/2 cups vanilla cake mix

1 3/4 cup all purpose flour

1 tsp of baking soda

1-2 cup chocolate chips (white, milk, semi-sweet, dark: your choice!)

1/2 cup sprinkles (of any color you want!)

  1. Preheat the oven to 375F. Mix together the dry ingredients. Set aside.
  2. Cream together the butter and both kinds of sugar. Add in the vanilla and the eggs and combine until well mixed.
  3. Stir in the dry ingredients, until almost completely combined.
  4. Add in the chocolate chips and mix. Add in the sprinkles and mix just until the sprinkles are mixed into the batter.
  5. Using a small ice cream scoop, place dough onto parchment lined cookie sheets and bake for 10 min.
