Hey everybody! We hope you had an amazing weekend and that your week is off to a great start! We had a very busy weekend. We’ve been getting ready to go to the Outer Banks, North Carolina this week (and yet somehow, we managed to not start packing until Sunday night….). So, as you read this, we’re driving down to the beach, and trying not to get lost! (we make no promises about this, we’re about as directionally impaired as they come, haha)
Anyway, this Friday is St. Patrick’s Day. So, we had to make something green for you guys to bake this week: Homemade Sugar Cookies! Growing up, our mom always made green things for us on St Patrick’s day: green milk, green pancakes, green mac and cheese, you name it, if it could be green, she colored. It made the day so much fun! Well, these cookies bring back all the fun. You can even take them to work and share all the fun with your friends!
These sugar cookies are super simple to make (and delicious!). They’re soft, chewy, and perfect. (not that we’re bias or anything…). Making these cookies was a challenge for us, because we realized that sugar cookies aren’t our favorite cookie. Every recipe we had wasn’t right or it didn’t taste right. When we came to the realization that maybe we just didn’t like sugar cookies and were about to give up on the whole thing, we came up with this recipe! So, if it can turn us into likers of sugar cookies, then it’s got to be good, right? Right!
Rolling these in sugar is the most important part, we think. It gives the cookies a slightly crunchy outside and a soft chewy inside. Hang on, talking about these makes us want one. Off to the kitchen we go….
Okay, we’re back! And they’re just as good as we remember!
The green sugar sprinkles are only for St. Patrick’s Day. You can roll them in whatever color you’d like: regular sugar, pink, blue, purple, the possibilities are as great as your sprinkle collection!
1 cup butter (2 sticks), room temp.
1 1/2 cups granulated sugar
2 tsp vanilla
3 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
sugar, for rolling
- Preheat your oven to 350F
- Cream together the butter and sugar.
- Add the egg and vanilla and mix until incorporated.
- Add the dry ingredients and mix until combined. Roll the dough into about 1 1/2 tablespoon sized balls, then roll in the sugar.
- Bake for 10-12 minutes, or until the edges are set and the bottoms are a light golden brown.
