3- Ingredient Vegan Chocolate Truffles
This is the last week of July, can you believe it? We certainly can’t! It feels like just last week we were in the Outer Banks! But us losing our minds is neither here nor there, and we’re sure it’s not what your here for, so we’ll move along!
And if we know anything about July, it’s that it’s been HOT. Not only hot, but muggy too! As we write this, we can feel our hair curling up from all this humidity, it’s like Florida here, with thunderstorms to boot, too! We hope it’s better where you’re at. And if it’s not, we’ve got the perfect recipe for you! Well, we’ve got a recipe for you even if it’s perfect weather where you’re at, we aren’t biased 😉
Chocolate Truffles! These are no bake and they are DELICIOUS! Plus, if your anything like us, then you’ve already got all the ingredients in your house! We can’t seem to find a bad thing about this recipe. It’s delicious, it’s no bake (yes to no extra heat!), and it is so easy, it’s almost criminal! So, you can join us in being outlaws if you make these!
We would like to point out that we burnt chocolate in the microwave making this. So, we say it’s that easy because we just have faith that you are smarter than we are. Yes, we burnt chocolate in the microwave, we know, that’s pretty mean, what ever did the chocolate do to us? Well, nothing we’re just that horrible with microwaves. We’ve been known to burn butter in the microwave to (also, metal in the microwave doesn’t work…). See, told you we weren’t biased.
And now, let’s talk about the ingredients we used!
For the chocolate we used two different kinds: chocolate bars and chocolate chips. For both we used Fair Trade brands that are also dairy-free.
For the chocolate chips, we used Enjoy Life mini chocolate chips. These are dairy-free, nut-free and soy-free. Not only are they allergen friendly, but they’re also fair trade. It’s something we always like to look for in the chocolate that we buy!
For the chocolate bar we used Endangered Species Chocolate. They are also Fair Trade, along with vegan, kosher, and non-GMO. On top of being Fair Trade, they also donate 10% of their net profits to non-profits that protect and preserve wildlife. Each chocolate bar has a picture of an animal on the front and when you open the package, there is information on that animal on the inside of the wrapper. It was like opening a Willy Wonka bar and getting a golden ticket! Did you know Chimpanzee populations have decreased 90% since 1900?
1 cup chopped, dairy-free, chocolate (or 6 oz)*
6 Tbsp almond milk
Chocolate Chips, dairy-free, for dipping
Sea salt, optional
- Put chopped chocolate into a heat safe bowl. Set aside.
- In a saucepan over medium heat, heat the milk until it just begins to boil, pour over the chopped chocolate. Let it set for about 10-20 seconds, so the milk can begin to melt the chocolate.
- Whisk together the milk and chocolate until it’s smooth. Refrigerate for 1 hour, until the chocolate is set. It should be hard, but soft enough to scoop and roll.
- Roll the chocolate into 1 Tbsp sized balls. Refrigerate for 20 minutes more.
- Melt the chocolate chips in the microwave at 20 second intervals until it’s compltely melted. Dip the truffles into the chocolate and sprinkle sea salt on top, if you desire. Let the chocolate set before serving.
*the smaller you chop the chocolate, the easer it is for the milk to melt it, so chop it as small as you can.
