Dairy-Free Fudge-Filled Cookie Bars

You know what makes the chocolate chip cookie so good? The chocolate! So we’ve stuffed these Dairy-Free Fudge-Filled Cookie Bars with as much of it as possible! We’re lovers of everything chocolate and are firm believers that chocolate makes everything better, so we did the only thing we knew how and added even more chocolate to the chocolate chip cookie.

We tested this recipe earlier in the week and we couldn’t stop eating them! Every time one of us was in the kitchen, we were sneaking into the bag of these a getting a little piece. And then after dinner, we’d eat a piece, so needless to say, these didn’t last very long! All it needs is a scoop of ice cream on top and it’d be even better! These bars are decadent and indulgent and exactly what you need to make this week.

We’ve made them twice in the last week and each time they were absolutely delicious! The first time we made these fudge-filled bars, we didn’t have any of the dairy-free sweetened condensed milk, so we used about 1/2 can of coconut cream. We don’t recommend this because it’s not exact and we can’t guarantee it’ll turn out exactly like this, but in a pinch, it’ll work!

When making dairy-free desserts with chocolate chips, we typically use Enjoy Life chips. This week we used their chocolate chunks.

This week we also needed to use dairy-free sweetened condensed milk, so we went in search of it! And we found it in Nature’s Charm.

If you don’t need to be dairy-free than these are perfectly delicious with regular butter and regular sweetened condensed milk!
