Peanut Butter Cup Cookies

We can’t believe that its already November! What has happened to the year? There’s only 22 days until Thanksgiving, which means that (dare we say it??) Christmas and the Holiday season is right around the corner!

So, we’ve decided to share a great cookie for the Holidays, it’s easy and quick, so you won’t have to put in too much extra time to have something that tastes like you slaved over it!

 For those of you who don’t like chocolate, you can simply scoop the dough onto a cookie sheet and bake them. They are delicious both ways!

Peanut Butter Cup Cookies

  • Servings: makes about 36 cookies
  • Time: Bake for 8-10 minutes, at 350F
  • Difficulty: easy

Ingredients:

1/2 cup butter

1/2 cup creamy peanut butter

1/2 cup packed brown sugar

1/2 cup sugar

1 egg

1/2 tsp. vanilla

1 1/4 cup flour

3/4 tsp. baking soda

1/2 tsp. salt

1 pkg Peanut butter cups, minis (about 36)

Directions:

  1. Cream together butter, peanut butter, and sugars. Beat in egg and vanilla. Blend flour, soda, and salt into the butter mixture.
  2. Place cookies into an engrossed mini-muffin tin. Bake at 350F for 8-10 minutes.
  3. Remove from the oven and push a peanut butter cup down into the center of each cookie. Let cool 10 min. Then remove from the pan and finish cooling on a wire rack.
