It’s finally starting to feel like winter here, snow and all. Which means that a cookie fresh out of the oven is just about the best thing, especially a warm chocolate cookie!
Lately we have been experimenting with cookie recipes. We wanted a double chocolate chip cookie. Really, just a chocolate cookie. So we have been testing out different versions of this recipe to decide which one we liked. To our delight, the recipes that we came up with were all delicious (the best kind of dilemma you could have). So, we kind of mixed a couple of the recipes, and this was the result. We think that these cookies kind of remind us of a brownie. Their chewy and have just the perfect amount of chocolate.
These cookies that we are sharing with you today have mint chocolate chips in them, but you can put whatever you want in them: just chocolate chips, mint chocolate chips, peanut butter chips (yes please!), or caramel chips. If you put caramel in them, we recommend sprinkling a little bit of salt on the top, for a salted caramel flavor (can you say delicious?). Also, in the recipe, you use melted chocolate, we used semi-sweet chocolate chips, which is what we recommend. However, you can use whatever you want: milk, semi-sweet, or dark chocolate. No matter what you use, we promise that these cookies will be a hit!

Double Chocolate Mint Cookies
1 stick butter
2 cups brown sugar
2 tsp. vanilla
1/2 cup chocolate chips, melted
2 1/4 cups flour
3/4 cup cocoa
1 tsp. baking soda
1 cup mint chocolate chips (or your choice off add-ins)
- Preheat oven to 375F
- Cream together butter, sugar, and vanilla. Add in the melted chocolate chips. Add eggs, one at a time and mix well after each.
- Mix all the dry ingredients together. Add to the creamed mixture and mix until combined. Add in the chocolate chips (or other add-ins)
- Bake 8 min.
