We can’t believe that it’s already February! And even though it’s still the middle of winter, we are craving summer desserts! The light, fruit inspired desserts (especially the ones with coconut!) We thought we would bring a little summer to our lives with these coconut candies.
Now, being February we couldn’t make it a full blown summer desert, so we took the coconut flavor from summer, and made it into a wintery candy.
If you’ve ever had a Mounds or and Almond Joy than you know what these kind of taste like! We loved these and think their a perfect winter candy that can be taken into spring or summer in the coming months! 🙂
Chocolate Coconut Candy
2 cups confectioners’ sugar
1/4 tsp salt
1 tbsp. light corn syrup
1 tbsp. vegetable oil
1 tbsp water
1 cup (about) shredded, sweetened coconut
1 1/2 cups semi-sweet chocolate chips
- Combine the sugar, salt, corn syrup, and vegetable oil. Beat with an electric mixer at medium speed, adding the water a little at a time until the mixture becomes a malleable dough. Add in the the coconut and mix in completely.
- Roll dough into you desired ball size, or shape them if you would like.
- Melt your chocolate in the microwave or on a double boiler. Dip your coconut candies into the chocolate until covered. Allow the chocolate to set before storing.
*Note: store in an airtight container for up to 2 weeks (but we don’t think that they will last that long!)
