We grew up on Harry Potter. Actually, we don’t even really remember a life without Harry Potter in it. If you look now, we’ve got Harry Potter everywhere: t-shirts, computer desktop backgrounds, on our Social Media feeds, and we even own three (yes, three!) wands! Hermione, Fred and George, if you were wondering. And if we’re asked to describe ourselves, first thing we’ll probably tell you is what Hogwarts House we’re in because, really, that’s all that matters (Hufflepuff and Ravenclaw, if you were wondering again!) So, tell us, what house are you in?
The Harry Potter books were some of the firsts books that we ever fell in love with and even now, we find ourselves going back to re-read them again and again, each time, getting something new from them. So, you betcha we had to celebrate Harry’s birthday! And it just so happens that it’s today! So, we thought we’d celebrate the only way we knew how: baking! We didn’t want to make a cake, we wanted to celebrate in a way that we could keep celebrating year round and we did just that with these Butterbeer blondies!
We went to Universal Orlando 2 years ago to visit the Wizarding World there and let us tell you, it was beautiful, absolutely magical. They did such an amazing job with the park, you feel as if you’re actually in Diagon Alley or Hogsmeade. But we’ll be the first ones to tell you that one of the best parts of the whole park is the butterbeer. It’s been 2 years since we’ve visited, but we still dream about it. There isn’t anything better than a cold butterbeer on a hot day! While we were there we sustained ourselves on a diet of mostly butterbeer with a few candies from Honeydukes thrown in for variety (Fizzing Whizbees anyone?)
When we were testing out recipes, it was really important that we captured the butterbeer flavor as closely as possible. And we did! These are basically butterbeer in blondie form and they are perfect! They have a great butterscotch flavor thats not overpowering and the white chocolate chips give it that creaminess that you get from the foam on the butterbeer. We’re getting excited just thinking about it! They’re just soooo good! Okay, who else is now planning to visit the Wizarding World because we’re about to just hop on a plane and head to Orlando!
One of the best parts about this recipe is that you can mix it all by hand, no mixer required! Not only are they really easy, but they are perfect if you are planning a Harry Potter themed birthday party, or movie marathon party, or if you just want to have a HP themed party for no reason. We’ve always wanted to have one, we’ve got the perfect dessert, now we’ve just got to find some friends…
And now, let’s chat about how we made these bars sustainably!
We used Wholesome Sweet sugar. They are committed to sustainable practices while also being Fair Trade!
We also use King Arthur Flour, whose flour is all grown in the United States, while also working to be more sustainable and a company that works to do good in the world, all while providing quality flour.
We also do our best to get our eggs from a local farmer at the farmer’s market.
4 oz butterscotch chips
2 sticks butter
2 large eggs
2 egg yolks
2 tsp vanilla
1 3/4 cups sugar
1 3/4 cup flour
1 tsp salt
1 cup white chocolate chips
- Preheat oven to 350F. Line a 9 in square pan with parchment paper or aluminum foil.
- Melt together the butter and butterscotch chips in a microwave safe bowl, in the microwave.
- Stir in the eggs, egg yolks, and vanilla. Stir in the Sugar.Fold in the dry ingredients.
- Bake for 35-45 minutes or until the middle is set and the edges are golden brown.
