We’ve made S’more Treats, S’more Lasagna, and even S’mores Brownies here on our blog, so you know what we need s’more of? ← does this count as a dad joke? Are we making dad jokes now? *sigh* this is not the kind of content you come to this blog for is it? We couldn’t help ourselves, we saw the joke and we just had to make it! Okay, now moving on (and here’s to hoping we don’t lose any followers over that one, haha!).
Okay, wait we’re still laughing over this joke, give us a moment to collect ourselves…
Okay, so what we were trying to say was that we didn’t really need another S’more dessert on here (for now anyway!) But what we do need is some Marshmallow Frosting (It’s far enough from s’more flavored that it doesn’t count, right? RIGHT?) And we were right, just look at how fluffy that frosting looks and paired with a chocolate cupcake, its amazing! Oh and did we mention that we also sandwhiched it between two chocolate chip cookies? Because we did and it was like heaven! We mean, just look at the photo we posted below, how can that not be delicious? Go on, try it, we dare you: triple dog dare you, in fact!
And while we really, like really, wanted some marshmallow frosting, we didn’t really want to put in all that extra effort. You know, of getting out a double boiler, and whisking and all that jazz. Some days, you just feel lazy. You know, those days when you wear pj’s all day and watch Netflix, eating all the cookies? We’ve all had days like that, right? No? Haha, this is awkward then…
Well then how about this? It’s been about 90F here all week, we thought it was supposed to be fall, but we guess Mother Nature had other ideas! Anyway, if you’re having weather like us, then you probably don’t want to spend your day in the kitchen standing over the stove! Yeah, this sounds like a good reason, we’ll go with this!
So, we’ve come up with a recipe without heat, that’s quick, easy, and absolutely delicious! It’s like marshmallow fluff, but better because you can put it on a cupcake! It tastes like a marshmallow or marshmallow fluff, but just a tad sweeter! Not to mention it’s a little bit lighter than regular buttercream. It’s a must try for the upcoming baking season: it’s the perfect change from the normal vanilla frosting.
Easy Marshmallow Frosting
2 sticks butter, room temperature
1 (7 oz) jar of marshmallow fluff
1 tsp vanilla extract
5 cups powdered sugar
1-2 Tbsp milk*
- Beat together the butter. Add the powdered sugar 1 cup at a time, mixing each cup in before adding the next.
- Add in the marshmallow fluff and beat until it’s well combined.
- Add the milk, 1 Tbsp at a time, until the frosting is the consistency you desire.
*you may need more, depending on the consistency of frosting that you want.
