Before we talk about this weeks recipe, we need to talk about one thing: Ed Sheeran! If you follow us on Instagram & watched our Instagram stories this past week, you would have seen that we went to his concert. We bought the tickets months ago and we’ve been counting down the days until his concert since. Last week, the time finally came and we were ridiculously excited. On the outside we kept our cool, we hope anyway, but on the inside we were 12 year old girls who were screaming and jumping up and down in joy. It was worth every penny we spent on the tickets and then some. We love Ed and we didn’t think we could love him anymore. We were wrong. He is so talented and he puts on a really amazing show. And he does it all with just a guitar and a loop pedal. It was perfect. Are you a fan of Ed Sheeran? What’s your favorite song?
You say October, we say pumpkin. It being October means that we can eat pumpkin everything. And no, we don’t mean “pumpkin spice” everything, we mean pumpkin, like real pumpkin. Pumpkin smoothies, pumpkin cookies, pumpkin pie, and now these pumpkin snack bites. These literally taste just like a pumpkin pie, but like, healthy!
We all know that once fall starts its all turkey, pies, and cookies, right? Well, sometimes, it can get a little overwhelming, ya? So we thought we’d get a little prepared ahead of the holiday season! Yes, we know it’s not for over another month before they start. We grew up in girl scouts and if there is only one thing that we can remember, it is “be prepared”.
Yes, we know, we’re probably the most underprepared people you’ll ever meet. Hey, we said we remembered it, not that we apply it to our lives. Though now that we think about it, maybe we should…
We said these were like pumpkin pie, but healthy, so maybe we should explain what we mean by that. These are the perfect on the go snack to take with you when you’re at work, when you’re shopping, or even if you’re just in the kitchen baking (because if your anything like us, you’ll forget to eat!). The oatmeal will help to keep you full so you can keep chugging along! Oh and did we mention that these are only 5 ingredients, 3 easy steps, they are gluten free and vegan! Okay, maybe we should have led with that, but we got so excited about Ed Sheeran! What are you waiting for, let’s get in the kitchen and start a baking!
Pumpkin Snack Bites
1 cup (8 oz) dates, packed
1 cup pumpkin puree
3 1/2 cups old-fashioned oats
2 tsp cinnamon
1/4 tsp nutmeg
- In a food processor, blend the dates until a ball forms.
- Add the pumpkin and blend until they are mixed together. Add the dry ingredients and process until all incorporated, scraping down as necessary.
- Roll the bites into Tbsp. sized balls. Enjoy!
